Happy Early Valentine's Day!

I baked these whole wheat, reduced fat organic milk cupcakes for my coworkers and my husband's coworker. The frosting was from a can because I bought some when they were on sale but have now decided to only make my own frosting. It just tastes so much better. The texture is also better when homemade. The recipe called for both vanilla and almond extract but i feel like they canceled each other out. I think next time i will only use vanilla.

Hubby and I are celebrating on Sunday the 15th instead so we would not interrupt our weekly Saturday schedule with family. It doesn't matter when we celebrate anyway. Just as long as we're together.

Yum! Those look good. We made frosting from scratch on our daughter's birthday cake, and it called for lemon extract. I recommend against that. It was too subtle, and just tasted strange. Happy baking!
